I bought a bag of Harvest Grains Blend at Trader Joe’s. It’s combination of Israeli couscous (also known as pearl couscous), red quinoa, baby garbanzo beans, and orzo. The mix of whole grains, especially quinoa, is very good for you. It makes a delicious, hearty and satisfying soup that you can customize with your own blend of vegetables. For a boost of protein, I added chicken meatballs. Add the fresh herbs at the very end, right before you serve the soup. Super easy, healthy and delicious soup; highly recommended!!!
For meatballs: Combine ground chicken, egg, parsley, mayonnaise, salt and pepper. Mix until fully combined. Make small balls about 1 inch diameter, set aside.
Soup:Place a large stockpot over medium heat. Drizzle it with olive oil, add onions and garlic, gently sauté until fragrant, about 2 minutes.
Add carrots and celery, season with salt and black pepper, cook for about 3 minutes.
Pour in chicken broth and water.
Add potatoes, harvest grains blend and bay leaf.
Bring to boil and reduce heat and simmer for about 2-3 minutes.
Add meatballs and bring to a boil.
Add lemon juice and let it simmer for about 12-15 minutes or until meatballs are cooked through. Taste and season with salt and pepper if needed. Turn off the heat; add fresh chopped dill and Italian parsley.
Garnish each bowl with spoon of sour cream if desired.
I have to share this simple Party BBQ Meatballs recipe with you. I make them as an appetizers all the time for parties, get-togethers, etc.
I am using pre-made meatballs from the store, but if you have few extra minutes, make your own! I usually get mine from Trader Joe's. The best part about these BBQ meatballs is no one would ever know they were so simple to make. You could even turn them into a main dish and serve them over creamy mashed potatoes. YUM!
1 bottle (18 oz.) Sweet Baby Ray’s Original BBQ Sauce
2 pounds frozen, prepared meatballs
2½ cups Jam ( I used strawberry)
Combine Sweet Baby Ray’s BBQ sauce with strawberry jam in a crock pot. Stir well.
Add frozen meatballs to mixture and stir until evenly coated.
Cover and cook on high heat for 3 hours, stirring about 2 hrs in.
Sauce will be simmering and meatballs will be heated throughout when done
