Kompot is a very popular Russian drink made of water, fruit and sugar. Unlike to my winter Apple Pear with Cinnamon Stick Kompot, this recipe is very refreshing summer drink. It is really easy to make at home and you can create unique version with your favorite summer fruits. 


Bring one gallon of water to a boil in a large pot.
Cut apricots in half and remove the pits. Remove stems and cut strawberries in half.
When water starts boiling carefully add all the fruits into the water and let simmer for 30 minutes.
Turn off the heat; add 1/2 cup sugar or to taste and mix well.
Let kompot cool completely at room temperature.
Strain off the kompot to have a clear juice. Refrigerate.


Serve Cold.
