Val’s White Christmas aka Farmer’s Cheese Turnovers with cranberry are delicious, yet so easy to make. Our family friend Val came over my house for Christmas Caroling with youth. I baked these scrumptious pastries and he loved them. He asked me what they were called and my response was “no name yet”. No worries. Seconds later he suggested we call them Val’s white Christmas. Now……. you can make them any time of the year; you will simply love them.
Ingredients
2 thawed sheets of puff pastry, 1 box has two sheets
3-4 Tbsp. Sugar
1/2 cup Cranberry, dry
1 egg
1 tsp. Vanilla extract
1 1/2 cups Tvorog (Farmers cheese or Ricotta)
1 egg, beaten
Direction:
Preheat oven to 400 degrees.
In a medium bowl mix well tvorog, one egg, sugar, vanilla and cranberries.
Take out your puff pastry sheets & cut each one into 4 equal squares.
Place equal spoonfuls of the cheese mixture into the middle of each square.
Fold over into triangles & seal the edges with your fingers or the end of a fork.
Transfer the triangles on a baking sheet lined with parchment paper or baking mat.
Brush the outsides with the beaten egg.
Bake for about 17-20 minutes or until deeply golden brown.
Note: Turnovers are best eaten the day they’re made, but they will survive up to 3 days on the counter.

These are sooo amazing. I have had them twice already and they are beyond yummy. When they are fresh out of the oven they taste the best.

I made them and they were good but just super oily. Is that normal? I absorbed some of the oil with paper towel but they were still pretty oily after. Is that how they were supposed to turn out ?
