Katleti are Russian style meatballs.  They are golden and crispy on the outside, moist and tender on the inside. It is a very popular comfort food in Russia. Katleti are usually served with a tasty side dish like mashed potatoes, salad, and rice or pasta.  It can be added in your soup or you have it in a sandwich.

The preparation of Katleti is very versatile. You can choose any type of ground meat that suits your taste and add your favorite spices to make these your very own specialty Katleti. Here is one of my succulent steamed Katleti recipes:

2lb ground chicken

1 egg

1/2 cup bread crumbs- Italian style

2 Tbsp. Heavy cream

1/4 cup fresh dill- chopped

3 cloves garlic-c rushed

Salt and pepper

oil for frying

In a bowl combine ground chicken, egg, cream, bread crumbs, and garlic; season with salt and pepper; mix until everything is combined.

Form katleti about  the size of an egg and flat them with your palms, place them in to the flat platter.

You will have approximately 20-25 katleti. In a large skillet heat about 2 tablespoons of oil over high heat and sauté the katleti (flipping ones) until golden browned, on both sides. Take them out and continue with rest of the batch.

At this point katleti are not completely cooked.

Preheat your oven to 400 F.

Place katleti into a casserole (baking) dish. Pour 1/2 cup chicken stock over the catleti, cover dish with foil and bake for 25 minutes or until they cooked.

Serve katleti warm with mashed potato,  rice or pasta and salad.
