My cousin Julia shared this fabulous apple cake with me. It is unbelievably simple to make; can be pulled together in no time and without an electric mixer. Chunks of apple are blended in a cinnamon vanilla batter. As it bakes, the aroma in the house is irresistible.
Just grab your cup of tea with this cake sit back and enjoy this beautiful autumn weather.
Ingredients:
1 1/2 cup of all purpose flour
1 tsp. baking powder
1/2 tsp ground cinnamon
pinch of salt
4-5 apples
4 large eggs
1 cup sugar
1 cup buttermilk
1 Tbsp. sour-cream
1/2 tsp. vanilla extract
1 stick of butter- unsalted
Sugar powder for dusting
Direction:
Preheat the oven to 350 degrees F. Generously butter an 9×11 baking pan.
Whisk the flour, baking powder, cinnamon and salt together in small bowl.
Peel the apples, cut them in half and remove the cores. Cut the apples into small chunks.
In a large bowl, beat the eggs and sugar with a whisk until they well combined. Whisk in the melted cooled butter and vanilla.
Whisk in buttermilk and sour cream.
Whisk in the flour mixture and mix well so that you have a smooth batter.
Fold in the apples, turning the fruit so that it’s coated with batter.
Pour the batter into the prepared pan and work with the rubber spatula to make it even.
Bake for 55 to 60 minutes, or until the top of the cake is golden brown or until a toothpick is inserted and comes out clean.
Transfer to a cooling rack and let rest for 10 minutes.
Carefully run a knife around the edges of the cake and remove the cake from the pan.
Dust with confectioners’ sugar before serving.
Enjoy!!!
