I love this time of the year when fresh locally grown fruits and berries are available at the farmers market.  This year they have a Farmers Market conveniently located right across the street from my work place in downtown, so I just can’t resist buying berries almost every week. Most of the time I am mixing them up in some Greek yogurt but every once in a while I like to bake using berries.  This dessert is not an overly sweet dessert.  It is refreshing and perfect for the summer but best of all, it is easy to make.

 

 

Ingredients:
1 1/2 cup all-purpose flour

1 1/2 tsp. baking powder

1/4 tsp. salt

1 tsp. cinnamon

6 Tbsp. butter- melted

3/4 cup sugar

2 eggs

2 Tbsp. milk

8-10 Fresh Strawberries

1/2 cup heavy cream- for topping

 

Direction:

Preheat the oven to 350°F.

In a mixing bowl, stir together flour, salt, baking powder and cinnamon.

In a mixer bowl, beat together the butter and sugar until mixture becomes fluffy and creamy. Add milk and eggs and beat for about 2 minutes.

Add in the flour mixture and mix gently with a rubber spatula; do not over work it.

 

 

Then, transfer the dough to a 9-inch tart pan, spread the dough evenly using rubber spatula.

 

 

Cut washed strawberries in half and arrange them in circle while gently pressing in to the dough.

 

 

 

 

Bake for 35-40 minutes. Let it cool for 10 minutes and sprinkle with powder sugar.

Serve it at room temperature, preferably with generous dollops of whipped cream.
