These tasty temptations are very similar to Russian Tea Cookies.
They have just right touch of sesame seeds and apricot jam to tickle any sweet tooth.
You can substitute peach, strawberry or raspberry jam if you like.
Ingredients:
1 cup butter, softened
1/2 cup powdered sugar
1 tsp. almond extract
1/2 tsp. salt
2 cups all-purpose flour
1/2 cup sesame seeds
6-7 Tbsp. apricot jam
Direction:
Preheat oven to 400ºF.
Beat/cream butter with powdered sugar in a large mixing bowl until light and fluffy. Beat in almond extract.
Gradually add flour and salt to the creamed butter mixture and mix well.
Shape dough into 1-inch balls; roll in sesame seeds and place 1 inch apart on ungreased baking sheets.
Using the end of a wooden spoon handle, make a 3/8-inch deep indentation in the center of each ball. Fill with jam.
Bake 13-15 minutes or until lightly browned.
Remove to wire racks and cool.
