Apple Cinnamon Pecan Pumpkin Cake is moist and delicious. With a cup of hot coffee or tea, it makes a wonderful breakfast or mid-morning snack.
Ingredients:
2 cups flour
2 tsp. cinnamon
1/2 tsp. baking soda
2 tsp. baking powder
1/4 tsp. salt
1/8 tsp. ground cloves
1 cup pumpkin puree
1 stick butter- room temperature
1/2 cup light brown sugar
1 cup white sugar
2 eggs
1 Tbsp. vanilla
1 large apple, peeled and diced to small pieces
1 cup raisins
1 cup chopped pecans
Direction:
In the bowl of your mixer beat the butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition. Add pumpkin puree and apples and mix it well. In a separate bowl, whisk together the flour, salt, and baking powder, baking soda, ground cloves, cinnamon, raisins, and pecans. Mix this into the cake batter.
Pour the mixture in a bunt cake pan and bake at 350 degrees about 1 hour or until a toothpick inserted near the center comes out clean. Cool for 15 minutes before removing from pan. Place on cooling rack and let it cool completely.
