Delicious creamy Alfredo sauce with fish katleti over pasta. I combined two of my recipes to make this dish – Fish (Salmon balls), and Salmon Fettuccine Alfredo.
I figured that these fish katleti will go well with creamy Alfredo sauce and pasta; so here we are ~Parmesan Fish Katleti with Alfredo Sauce and Pasta.
I wish I could find a better name for this. Parmesan Fishballs with Alfredo Sauce? Parmesan Fishball Alfredo? Alfredo Parmesan Katleti? Katleti with Alfredo Sauce? Anyways… you could call it so many ways, but “deliciously- mouthwatering” is definitely one of them.
This homemade Alfredo sauce is not even close to the store-bought jarred ones. And it’s not even difficult to make.
Not big fan of fish??!! No problem, you totally can use ground chicken.
Serves 6-8
Ingredients
Katleti:
2 pounds fresh salmon fillet
2 large eggs
1 large onion coarsely chopped
1 large carrot, grated
4 Tbsp. vegetable oil for frying
1 tsp. salt
½ tsp. black pepper
1/2 cup Italian bread crumbs
1 Tbsp. mayonnaise
Sauce:
3 Tbsp. butter
2 cups heavy cream
2 cups Half & Half
1 cup freshly grated Parmesan cheese
3 cloves garlic, crushed
Salt and pepper, to taste
Nutmeg – grated
Fresh chives for garnish
Direction:
Heat 2 tablespoon oil in a large nonstick skillet over medium-high heat; add onions and carrots sauté for about 3-4 minutes.
Transfer to a bowl and let it cool.
Grind the fish and sautéed onions and carrots by using a meat grinder.
(If you are using the food processor: add sautéed onions and carrots to a food processor and process until smooth, add the fish and continue to process until smooth as a paste.)
Transfer grounded fish, onions and carrots in to a big bowl. Add bread crumbs, eggs and mayonnaise, Season with salt and pepper. Mix just until combined.
Water your hands, form the fish mixture into 1 1/2 inch balls.
In a large skillet heat about 2 tablespoons of oil over high heat and sauté the katleti (flipping ones) until golden browned, on both sides.
Take them out and continue with rest of the batch. At this point katleti are not completely cooked. Place fish katleti into a casserole (baking) dish.
Preheat your oven to 400 F.
For the sauce, add butter into sauté pan over medium heat; add garlic and sauté for 1-2 minutes. Add heavy cream and Half & Half, nutmeg and 3/4 cup of Parmesan cheese. Season with salt and pepper; bring to a boil;
Pour the sauce over the katleti into the casserole dish, sprinkle with rest of the Parmesan cheese and bake for 25-30 minutes or until they cooked.
Best if served with cooked pasta. To serve, place fish katleti on a plate with pasta and generously spoon some Alfredo sauce on top of the fish. Sprinkle with chopped chives.
