This is a simple breakfast for a lazy Sunday, when you don’t feel like cooking. My husband prepares homemade smoked salmon and I love making sandwiches with it. The combination of fresh cucumber, dill, cream cheese, and hardboiled eggs works well with the smoked salmon on multigrain bread. To finish it off, I also add caviar.
*** Caviar is completely optional
Serves 2-4
4 slices dark rye or multigrain bread
2 Tbsp. Cream cheese
2 large hard-boiled eggs, peeled and sliced
1/3 English cucumber sliced thinly
Fresh chives or dill
4 ounces sliced smoked salmon
2 Tbsp. Caviar- optional
Direction:
Lightly spread cream cheese on each slice of bread; season with black pepper and fresh chives or dill.
Place smoked salmon on top of the cream cheese. Stack cucumber on top of the salmon. Place bread slice cream cheese side up, finish with two slices of egg, caviar and fresh dill or chives. Season with salt and pepper if needed.
