Syrniki are a kind of flat cakes made in a pan — technically you could call them pancakes. These are very moist pancakes with pieces of succulent apricots. I added to the dough a few drops of almond extract; finished pancakes I served with fresh whipped cream and drizzle of golden honey.
Ingredients:
1 lb. curd (farmer’s) cheese
2 eggs
¾ cup flour or slightly more, if necessary
Pinch of salt
1 tsp. baking powder
1 Tbsp. sugar
4 fresh apricots- finely chopped
2 Tbsp. Oil for frying
Directions:
Combine curd/farmer’s cheese, eggs, chopped apricots, salt and sugar.
In another bowl, combine the flour baking powder. Fold the cheese mixture into the dry ingredient. Mix well. Don’t worry if the batter will be slightly sticky.
Heat oil in a frying pan over medium heat. Use measuring scoop (I used a 1/3 cup measure) to pour batter into the pan.
Cook the cakes for 2 to 3 minutes, then flip them and cook for another 2 to 3 minutes. They should be golden light brown.  
Serve warm with drizzle of honey. Enjoy!!!
