My mom used to make these  blini with meat and eggs for us when we were young and I remembered we all loved it very much.  We simply grew up with these. This is one of my favorite childhood food.  They’re simple to make,  little bit of batter goes a long way. The best thing is they can be kept in the refrigerator and warmed up later. 

Ingredients for crepes:

½ cup warm water

1 cup milk

4 large eggs

4 tablespoons unsalted butter, melted

1 cup flour (I used Canadian flour)

2 tbs sugar

1/4 tsp salt

 

Ingredients for filling:

 1.5 lbs ground beef 

5 boiled eggs

1 large onion

1-2 tbs thin sliced fresh dill  

Salt, pepper, vegeta

Oil to saute 

 

 Mix eggs with sugar, salt add melted butter.

 

 

 

 

 

 

 

 Add flour and mix well. This is a good tip my aunt teach me to mix flour before adding milk and water.

 

 

 

 

 

 

 Add warmed milk  and warm water. Mix well.

 

 

 

 

 

 

 

Warm skillet, spread a little butter on it.

Use about 3 tbs of batter for 1 crepe.

As you pouring batter  on the skillet, swirl it around to make an even circle. 

 

 

 

  

 Cut onion into small cubes. Saute in oil until golden brown.

 In another skillet saute ground beef until ready.

 

 

 

 

 

 

Mix onion and beef add dill, salt, pepper, vegeta sesoning. 

 

 

 

 

 

 

 

 Tap with paper towel to get rid of extra oil.

 

 

 

 

 

 

 

 Mix in sliced into cubes eggs. 

 

 

 

 

 

 

 

 Put about 2 tbs of meat on each crepe.

 

 

 

 

 

 

 

 Roll like a burrito. You can keep em in refrigerator until you are ready to eat. 

 

 

 

 

 

 

 Saute with a little butter until golden brown. Enjoy with sour cream.
