During strawberry season, this salad is one of my favorite salads. I especially like using the local strawberries. My co-worker shared a similar version of this salad recipe with me.
Crunchy apples, strawberries, walnuts and blue cheese come together with a slightly thick and sweet poppy seed dressing. You can choose substitute the blue cheese with feta cheese.
Add this refreshing and colorful strawberry spinach salad to your next dinner party menu or simply have it for lunch.
Dressing:
1/2 tsp. salt
2 Tbsp. Sugar
1/4 of small onion, chopped
2 Tbsp. rice vinegar
2 1/2 Tbsp. honey
1/2 cup canola oil
1Tbsp. Poppy seed
1Tbsp. Poppy seed
Salad:
1 (6oz) bag baby spinach leaves or spring mix
1 cup fresh strawberries, sliced
1 medium apple, cored, seeded and cut into small chunks
3/4 cup walnuts, toasted and coarsely chopped
1/4 red onion, peeled and cut into thin half rings
2 oz. Blue cheese crumbled or 4 oz. feta cheese
Direction:
Place onion, honey, salt, and sugar in a blender jar. On the low speed slowly add the oil, rice vinegar and poppy seed. Refrigerate the dressing until you are ready to serve.
Assemble the salad:
Place salad ingredients in large salad bowl and toss to blend. Drizzle with dressing and gently toss until lightly coated. Serve immediately.

Grandma’s Chicken with Gravy - Manja

Ingredients
- 2 lb. chicken with bone, organic (I used 1/2 chicken)
- Salt and freshly ground pepper
- 1 carrot, grated
- 1 yellow onion, finely chopped
- 1 bay leaf
- 2 Tbsp. Olive oil
- 2 cloves garlic, minced
- 4 Tbsp. all-purpose flour
- 1 Tbsp. tomato paste
- 1 tsp. sweet paprika
- 1/2 tsp. ground cumin
- 4 cups chicken stock or water
- 1 Tbsp. fresh dill -finely chopped
Instructions
- Cut chicken into pieces; season the chicken pieces with salt and pepper.
- Heat oil in a large, heavy-bottomed pan on medium high heat; add meat to hot pan and fry on 1 side for 2-3 minutes, until golden brown, and then use tongs to turn the pieces over and fry for another 2-3 minutes, until golden brown.
- Take the chicken out and set aside. To the same pan where you fried chicken, add onions, garlic and carrots; sauté for about 4 minutes; mix in tomato paste, paprika and cumin; add flour and mix well so all the vegetables will get coated with flour; cook for 1-2 minutes. Slowly add chicken broth and stir until smooth and thickened. When gravy is thickened and became smooth add the chicken.
- Bring the sauce to a boil; reduce the heat down to low; cover the pot and cook on low heat for 25-30 minutes. Sprinkle with fresh dill. Serve with mashed potatoes, or with your favorite pasta, I recommend, cavatelli, ravioli, spaghetti or ziti, or simply with fresh baked bread, just like my grandmother used to do.

This is such a pretty and yummy salad. So healthy, too! Someone in our cooking club makes this type of salad often and it is so good! I need to make this when we have some ripe strawberries.
