4 vine ripened tomatoes
4-ounce mozzarella or Colby Jack cheese
1 cup light mayonnaise
3 cloves garlic, minced
1/4 tsp. black pepper
1 Tbsp. finely chopped Italian parsley
In a bowl, mix mayonnaise, garlic, black pepper and Italian parsley.
On small slots grate cheese into a bowl.
Slice tomatoes thickly about 1/4 inch, and arrange on to serving plates. Spread mayonnaise mixture over tomato slices with butter knife.
