I love all the varieties of Panini sandwiches. It is a perfect sandwich for lunch or a quick meal. A Panini maker will be ideal for this recipe but if you don’t have one, it will not be a problem. Just place the sandwich in a grill pan and use something heavy to press the sandwich onto the pan.

 On my day off from work, my sister Victoria stopped by and we made this delicious Panini for lunch.  For the filling of my Panini, I just went with what I had in my fridge. I used leftover rotisserie chicken.  We really enjoyed this Panini.
You can make your own variation by using turkey cold cuts and adding things like artichoke hearts, olives, etc. I think when you make a Panini, the combinations are endless and very delicious.

Serves 4-6
 
Ingredients:
1 focaccia bread
2 cups shredded rotisserie chicken
3/4 cup roasted red peppers
1 tomato, sliced
6 Tbsp. basil pesto
4 ounces Havarti or pepper jack cheese, thinly sliced
 
Direction:
Cut focaccia bread into 4-6 pieces, split pieces in half horizontally.


Spread pesto over inside of each bread.

 


Layer the bottom bread piece with cheese, peppers, chicken and tomato; Top with other bread piece.


Heat Panini press, spray with cooking spray and cook Panini for 4-5 minutes or until cheese is melted and Panini are lightly browned.


 
****Panini can also be made in a grill pan or hot skillet. Just heat grill pan or skillet over medium heat and spray with cooking spray. Add sandwiches and place some weight such as large heavy pan on top (Dutch oven is perfect) so Panini flatten as they cook. Cook for several minutes. Serve hot.
