These are quick and easy to make cookies! They are holiday must-haves, with or without icing. Kids love help cut these out and help decorate them.

Ingredients:

1stick softened butter
2 large egg yolks
1 tsp. baking powder
½ cup corn starch
½ cup sugar
1 Tbsp. freshly grated lemon zest
¾ cup all-purpose flour
For the glaze:
1 cup powdered sugar
4 tsp. fresh lemon juice
Cookie Decorations as desired
 
Direction:
 
Preheat the oven to 350 degrees (F).  Line 2 baking sheets with parchment paper.
In a medium bowl, whisk together flour, baking powder, corn starch, and lemon zest.With an electric mixer, beat the butter and granulated sugar until fluffy. Add the egg yolks, and beat to combine. Gradually add the flour mixture, mixing until just incorporated.
Divide the dough in half and pat each half into a disc.  Generously flour your work surface and roll out to 1/4 inch thick dough.  Cut into desired shapes and place the shaped dough onto your baking sheets. (You can re-roll the scraps).  Bake for about 12-14 minutes. Let cool on baking sheets for couple minutes, then transfer to cooling rack and let cool completely. In a medium bowl, whisk together powdered sugar and lemon juice. Dip each cookie top into the lemon glaze and let set, about 20 minutes.
 
Decorate as desired.
