This lentil soup is incredibly tasty and very good for you.
This nutritious dish provides complete protein, has a small amount of fat and really fills you up.
Serves 6-8
Recipe ingredients:
7 cups water for cooking
1 ½ lb. red lentils (sorted; free of debris, rinsed with cool water and drained)
2 large carrots washed, peeled, ends trimmed and chopped to ½ inch cubes
1 Tbsp. Olive oil
4 fresh garlic cloves- minced
½ medium yellow onion –chopped to ½ inch cubes
1 cup tomato sauce
1 cup red bell pepper chopped to ½ inch cubes
1 Tbsp. Salt
1 tsp. ground cumin
1 Tbsp. paprika
1/6 tsp. cayenne pepper powder
1/2 tsp. freshly ground pepper
Recipe directions:
Heat the oil in a large pan over medium heat.
Add the onion, carrots, bell pepper, and garlic; sauté until all the vegetables are tender, about 5 minutes. Add the tomato sauce, ground cumin, paprika, cayenne pepper, black pepper and salt.  Mix. Simmer for about 2 minutes.
To the crock pot/slow cooker add lentils, water and sautéed vegetables. Mix well.
Set timer for 4 hours on High or 8 hours on Low.
After it’s done, check the seasoning, adding salt and more of the spices if needed.
In small batches pour the soup in to the food processor/blender and puree until smooth consistency. ( Be very careful, the soup is hot)
Scoop the soup into bowls.  Serve with your favorite chopped herbs or sprinkle with the Parmesan cheese.
