The Herring Salad is an interesting combination of Beets, Carrots, Herring, Potatoes, Green onion with a Mayonnaise sauce. The strong flavors and textures make it something different and memorable.
This Herring salad is loved and considered one of the most delicious salads by Russians everywhere.

2 eggs
1/2 cup green onion, finely chopped
1 cup mayonnaise
Direction:
Boil vegetables together in one pan until they are fork
tender, let them cool till room temperature and peel;
Hard boil the eggs.

Cut herring meat into little pieces (check for bones).
On a plate ( I used a plastic tube to make it circle) ,
grate boiled potato on big slots of grater and form thin layer(about
1/3inch) in the middle of the plate
Spread mayonnaise evenly on top in a thin layer. Use a fork to even the
layers.
Then make a layer of herring
Sprinkle chopped green onions on herring layer
Spread mayonnaise evenly on top in a thin layer. Use a
fork to even the layers.
Next layer would be the carrots (grate on big slots of grater) spread evenly

prepare this salad night before your serving day.

Hi inn, in ur receipe u mention to hard boil the eggs. But then don’t mention what to do with them. Just a fyi. I ussually just decorate the top with shredded eggs.
