I love breakfast sandwiches. This open face savory sandwich makes a perfect breakfast meal. Fluffy scrambled eggs, rich smoked salmon, creamy avocado and tangy feta cheese over English muffin;    Delish…. Give this a try and have a lovely, creamy and cheesy good morning!

Serves 2-4
4 regular or whole wheat English muffins
1/2 cup feta cheese, crumbled
1 avocado, halved, pitted, peeled and diced
6 large eggs
4Tbsp. milk
salt & pepper to taste
4 oz. Smoked Salmon- thinly diced
2 Tbsp. butter
Chopped chives or fresh dill
Toast English muffins on a stovetop griddle or in a toaster.  
While toasting, crack eggs into bowl add in milk, season with salt and pepper. Whisk to blend everything together. Melt butter in a nonstick skillet over medium-low heat. Pour the egg mixture into the pan and cook for about 3-4 minutes. Turn off the heat and stir in feta cheese.
To assemble toasts, place muffins face up on a plate.  Place scrambled eggs on top of the bread, top with diced avocado and smoked salmon. Sprinkle with chopped chives or dill if desired. Serve with coffee.
