This is the perfect simple party recipe; you can make cheese spread ahead of time, and simply make up your canapes when you are ready to serve. My sister in-law Natasha shared this delicious recipe with me. Whenever we have parties at our mother in-laws house, she makes them, and they are the HIT!!! Kids love them, well……, adults also…..
These can be topped with chicken instead of shrimp, choose your favorite cheese… You have lots of options here.
Makes about 25 Canapes
Ingredients:
2 baguettes, sliced into 1/2 toasts
1 (12 ounce) package cooked shrimp, drained and roughly chopped
1/2 package of cream cheese, softened
2 Tbsp. Sour Cream
2 Tbsp. Heavy Cream
1/3 cup mayonnaise
4 scallions, chopped fine
2 Tbsp. Italian parsley, chopped
Salt and pepper
1 cup freshly grated Parmesan cheese
1 cup freshly grated Mozzarella cheese
Direction:
Preheat oven to 450F.
Mix together cream cheese, sour cream, mayonnaise, heavy cream, scallions and parsley. Season with salt and pepper; add chopped shrimp and mix well. On a baking sheet, spread out the slices of bread. Pile the mixture onto each slice of bread. Top with Mozzarella and Parmesan grated cheese. Bake in oven until golden brown and cheese is melted for about 12-13 minutes.

I prepared the spread last nite, added shrimp today and baked them while the rest of the food was cooking.I really like it that you can prepare everything beforehand and just pop it in the oven.They were super delish.My Dad who is very picky eater ate three.lol.
