Breakfast pasta

Breakfast is a meal that I love. Especially on Saturday mornings, when I eagerly get up early in the morning to cook a delicious breakfast for my family. There is something so comforting about eating breakfast as a family.

This is another of our creations. My sister calls this dish Mediterranean Sunrise Pasta.  It is plain and simple. Feta cheese, tomatoes combined with scrambled eggs, ham and angel hair pasta to provide breakfast with an international accent. Really, it’s everything you want out of a classic pasta dish, but with a breakfast focus so you can serve it for your first meal.
You can easily swap the ham out for crumbled breakfast sausage, if that is your preference or you can have both.  You can make this dish with any leftover spaghetti. The trick is to stir after adding the eggs so they spread evenly over the pasta instead of chunk up.
Ingredients:
1 lb. angel hair pasta or any other -cooked al dente
1 cup cooked ham, chopped (optional)
5 eggs, beaten
2 Tbsp. butter
1/2 cup Feta cheese
1/2 cup cherry tomatoes, halves
Salt and Pepper
 
Direction:
In large skillet melt butter, add the cooked pasta and ham to the pan.  Toss a few times.

 
Add the eggs .
 

Toss until the eggs begin to cook around the noodles (about 3-4 minutes depending on your preference of egg doneness.)  Add, feta cheese and tomatoes; Season with salt and pepper (cheese is salty, so don’t over salt)
Serve warm.
