One Saturday morning, I woke up to the smell of Apple Cinnamon pancakes. My nine year old daughter decided to make pancakes with Bisquick pancake mix for breakfast.

She added grated apples, ricotta and cinnamon to her pancake mix.  It was simple and delicious.  We enjoyed her wonderful breakfast with fresh brewed coffee.  The best part of the breakfast was to watch my daughter feel a sense of accomplishment and gratification. I am so proud of my baby girl!!!

 Try these apple cinnamon pancakes.   It only takes a few minutes to make.

Makes approximately 15-20 pancakes

Ingredients
2 cups Bisquick mix
1 cup milk
2 large eggs
1/2 cup Ricotta cheese or Russian tvorog
2 apples, peeled, cored and grated
1 tsp. ground cinnamon

Direction:
Heat a griddle over medium heat on the stove. Whisk together the Bisquick mix, milk, eggs, grated apple and cinnamon in a mixing bowl. Lower the heat to medium-low, spay the griddle with cooking spray. Ladle the pancake batter (about ¼ cup) onto the griddle. Cook without disturbing until bubbles form all over the top. Then flip the pancakes and cook for couple more minutes. Pancakes are done when they are golden brown.
Serve with your favorite toppings.
