Bean soup with smocked turkey

This Smoked Turkey White Bean Soup is made from scratch with dried beans, slowly simmered to tenderness with smoked turkey legs and warm spices. It is so delicious, hearty, filling and uses turkey instead of ham which really cuts the fat and calories. This is also great to freeze, so you can have healthy freezer meal. 

Ingredients:

1 pound dry great Northern or other white beans

2 smoked turkey legs

1 medium yellow onion, chopped

1 large tomato, chopped

6-8 cups water (give or take one cup depending how thick or thin you like your soup)

1-2 bay leaves

1 tsp. cumin powder

1 tsp. sweet paprika

Salt and pepper, to taste

Red pepper flakes (optional)

Italian parsley or fresh dill for garnish

Direction:

Place washed beans, turkey legs, chopped onion, chopped tomato and 6-8 cups of water into the slow- cooker. Add bay leaves, cumin, paprika and season with salt and pepper. Set timer for 4 hours on high or 8 hours on low.

After it’s done, check the seasoning and adjust as desired. Remove the bay leaves and discard. Remove the turkey legs, separate the meat from the bones and return the meat back to the soup.

Scoop the soup into bowls. Serve with chopped parsley or fresh dill and red pepper flakes.
