Siniki

Syrniki also known as Farmers Cheese Pancakes are one of my favorite childhood breakfasts. Traditionally they served with sour cream, jam or honey.

Ingredients:

2 cups farmer’s cheese (tvorog)

1 egg

1/4 – 1/3 cup sugar

1/2 cup flour, plus 1/3 cup for dredging

1/2 tsp. baking soda

1/3 cup dry cranberries or raisins

Butter or oil for pan frying

 Directions:

In a large mixing bowl, combine all the ingredients except butter or oil. Using fork mix everything together until well combined. Shape pieces of dough into golf-ball sized ball and then flatten with your hands.

Preheat a non-stick skillet with butter or oil. Dredge each patty in flour both sides and cook on medium heat until both sides are golden brown.

Syrniki traditionally served with sour cream, honey, or your favorite jam.
