Ingredients:

2 cups plain Greek yogurt

¾ English cucumber, peeled

3-4 garlic cloves, pressed or minced

1 tablespoon lemon juice

1 tablespoon Extra Virgin Olive Oil

Salt and black pepper to taste

2 tablespoons chopped fresh dill and mint

Instructions

Remove the skin and the seeds of the cucumber and grate it into a bowl. Wrap the grated cucumber in a towel and squeeze to get rid of the excess water.

In a medium bowl, combine the cucumber, minced garlic and olive oil, the yogurt, lemon juice, fresh dill and mint, and mix until the ingredients are combined. Season with salt and pepper to taste.

Cover and refrigerate for about 20 -30 minutes before serving.

Leftover tzatziki sauce keeps well, chilled, for about 4-5 days.

Enjoy!
