This is a very refreshing summer drink for those hot summer days.  It perfectly combines the sweet and tart with a touch of refreshing mint and fresh berries to make this an addicting drink.

I think it’s a much healthier alternative to milk shakes and smoothies, plus you have control of what goes in your drink. 

Ingredients:

Blueberry syrup:

2 cups fresh Blueberries – washed

1 cup sugar

2 cups water

1 cup fresh Mint- roughly chopped

 

Green tea:

10 cups water

4 green tea bags or 2Tbsp. green tea leaves

Direction:

Steep the tea in 10 cups boiled water for 5 minutes, then disregard the tea bags and set aside to cool while we prepare the blueberry syrup. 

 

I prefer using green tea leaves, steep and strain in a French press. 

But do whichever is your favorite way of steeping tea.

Combine the tea and blueberry syrup in a large jug and mix well.  Refrigerate for couple hours.While the tea is steeping, combine blueberries with two cups of water in a saucepan and bring it to a boil; lower the heat and simmer for about 5 minutes; using fork or big spoon smash the blueberries.

Add lemon juice, mint and sugar and cook for about 2 more minutes. Turn off and cool. When slightly cooled, strain through a strainer to have clear blueberry syrup.

Serve garnished with fresh mint leaves and extra ice if desired.
