Summer is finally here and that means many of us turn to salads. I love the simplicity of this Russian cucumber radish salad.Thinly sliced cucumber and radishes tossed with the dressing which is nothing but sour cream, lemon juice and fresh dill.
Serves 4
Ingredients:
1 small English cucumber
1 bunch of radishes (8-9 radishes)
2 spring (green) onions sliced thinly
1/2 cup sour cream
2 Tbsp. fresh chopped dill
Salt and pepper to taste
1 tsp. fresh lemon juice
Direction:
Trim off the ends and thinly slice the radishes.
Halve the cucumber lengthwise and thinly slice into half-moons.
In a bowl toss all the ingredients until vegetables are coated evenly.
Serve immediately.

Totally summerish salad. I love it.Never tried adding lemon juice.But certainly will try adding it.
It is.I like that lemon gives a little refsheing taste to it. 🙂
The Indian summer salad is quite similar to this salad sans sour cream. Would love to try your version.

I made this last night as part of a Memorial Day BBQ feast, and it was so good! I used radishes that were delivered from a CSA local organic farm, and dill from my garden. I always use Greek yogurt instead of sour cream (much healthier), and it worked perfectly 🙂
