A simple, healthier version of traditional coleslaw is full of vitamins A and C. The mild, sweet flavor and crunchy texture of cabbage, carrots, pineapple and dates give this salad its versatility.
Ingredients:
1/2 head green cabbage-shredded
3/4 cup canned pineapple chunks without juice
5 dates chopped thinly
1 Tbsp. sesame seeds
1 medium carrot, shredded
Dressing Ingredients:
1 Tbsp. Canola oil
1 Tbsp. Canola oil
2 Tbsp. Lemon juice
2Tbsp. Honey
Direction:
In a large salad bowl, whisk oil, honey, lemon juice. Add cabbage, carrots, pineapple and dates.
Toss to combine. Sprinkle with sesame seeds.
*** Mix salad with dressing ONLY before serving.
