Happy October, friends! There is something about the months of September and October, they both scream fall to me; Does anyone else feel this way? 

And what speaks ‘fall’ better than a little pumpkin in your cooking??!!
Seriously…. These pumpkin oladies were big hit for my family this weekend.

Oladi is a variation of pancakes that we like to cook for breakfast. Hot straight out of the pan and dripping with honey….. or your favorite topping.
 

Ingredients: 

1 cup all-purpose flour
1/2 tsp. salt
1 tsp. Baking soda
1 Tbsp. vinegar
3/4 tsp. Cinnamon
1/6 tsp. Nutmeg
2 Tbsp. Honey
3/4 cup fresh pumpkin- grated
1/2 cup Libby’s pumpkin puree
3/4 cup Buttermilk
1/2 cup Ricotta cheese or Russian tvorog
2 eggs
4-5 Tbsp. Vegetable Oil
 
Directions:
In a large bowl, mix together eggs, ricotta cheese, buttermilk, pumpkin puree, grated fresh pumpkin, honey, and baking soda mixture (In a separate little bowl mix baking soda and vinegar; this will carbonate the soda so that you won’t taste it).

Add flour, salt,cinnamon and nutmeg and gently mix until all the ingredients are combined.  (the batter should be  easily spooned onto a pan)

Preheat frying pan at medium heat and add 1 Tbsp. oil.  Scoop about 1/4 cup of batter per each oladi onto pan

and cook until golden brown; flip and let other side cook until golden browned. Repeat these steps until all the batter is gone. Keep adding more oil to the pan with each batch.

Serve oladi warm with your choice of topping: jam, syrup, sour cream… I like oladi with honey…lots of honey!
