These Rogaliki Cookies – Rugelach a must have with tea. They are well known among Slavic community. My dear friend Raisa shared this recipe with me and it never fails to satisfy our sweet tooth.

Ingredients:

Dough:

1cup unsalted butter room temp

1 cup sour cream

3 cups flour

1 tsp. active dry yeast

 

Filling:

1 cup jam or fruit preserves

3/4 cup walnuts

2 cups sugar powder

Flour, to dust surface

 

Instructions:

In a small bowl combine your favorite jam and crushed walnuts.

Place softened butter, sour cream and yeast in a mixer bowl and with the paddle attachment beat until well combined. Scrape the sides of the bowl. Switch to a dough hook mixer attachment and gradually add the flour.

The dough should be very smooth and not sticking to your hands. Transfer the dough to a dusted with flour working surface and divide it into 6 even pieces; shape each piece into a small ball.

Get one of the dough balls and keep the rest covered with the kitchen towel.

On a flowered surface roll the dough into a circle about 11-12 inches.

Using pizza cutter cut the dough into even triangles. Place about 1 teaspoon of the jam mixture on outside edges of each piece.

Fold the dough from the edge to cover the jam and roll it in towards the center.

Place the cookies end edge down onto a pan lined with parchment paper. Finish rolling rest of the dough.

Bake in preheated oven at 350F for about 20-25 minutes or until they are nice golden brown. Remove from the oven and let them cool for about 10-15 minutes on a baking sheet.

Place the powdered sugar into a large bowl and working with 6-8 cookies at a time cover them with powdered sugar completely.
