A quick and easy broccoli salad with the addition of cauliflower, radish, celery and almonds. The best part is that it can be prepared the day prior to serving; It tastes better after it sits overnight, which allows the flavors to marinate together… This salad can be perfect as a side dish or if you’re looking for a different way to make broccoli.
Ingredients:
1/2 Head broccoli (or about 2 cups)
1/2 Head cauliflower (or about 2 cups)
1/3 cup green onion finely chopped
2 celery sticks – finely sliced
3 Turkey bacon slices cooked, crumbled- optional
4-5 radishes- cut in half, sliced
1 cup cheddar cheese – shredded
1/4 cup chopped almonds
Dressing:
1/2 cup mayonnaise
2 Tbsp. sugar
2 Tbsp. apple cider vinegar
Salt and pepper to taste
2 Tbsp. Italian parsley chopped- optional
Direction:
In a small bowl, whisk the mayonnaise, sugar, vinegar, salt and pepper.
Cut the broccoli and cauliflower into bite size florets. In a large bowl combine broccoli, cauliflower, cheese, almonds, green onions, celery and radish;
add dressing and toss gently so all the vegetables get coated. Refrigerate for several hours or overnight. Garnish with bacon just before serving.
