Oreshki

Oreshki and Gribochki – Walnut and mushroom shaped cookies are one of my favorite childhood cookies! This traditional Russian dessert is very delicious and so easy to make! Cookie filled with creamy Dulche de Leche. Very festive and perfect for holiday parties.

You will need a special mold to make them. Here is where I got mine: http://www.oreshnitsa.net/Pages/default.aspx. I made some walnut cookies- oreshki and some mushroom shape cookies- gribochki. This company offers mushroom shape and walnut shape molds, perfect Christmas present for your loved ones.

Ingredients:

3 egg yolks

1 cup of sugar powder

1 stick butter at room temperature

1 stick margarine at room temperature

1 Tbsp. mayonnaise

1/2 tsp. baking soda

2 1/3 cups flour

 

Direction:

For the filling you will need to boil the condensed milk the night before. Here is how I do:  Place condensed milk cans (not opened) into slow cooker, cover them with water and turn on for 6 hours. After they are cooked, let them cool at room temperature.

Or Boil the condensed milk in a closed can on low heat in a saucepan with water (so the cans will be completely under water) and boil for 4 hours adding water to the saucepan if necessary.

Or buy Dulche de Leche (I usually get mine from Walmart from Mexican section)

How to make dough for the nuts and mushrooms: beat the margarine and butter with sugar until well incorporated. Add eggs one at a time. Add mayonnaise. Then gradually add the flour with baking soda. You will have nice soft dough.

Before you begin baking, heat the ‘Oreshnitsa’. Make small balls out of dough and bake them using the “Oreshnitsa” until light golden color. Take them out and if you see excess dough on the sides just cut them off so you will have nice and clean nut/mushroom halves.

For the filling:

Beat butter with mixer on medium high heat until white and fluffy. Add cooked condensed milk and beat until well mixed.

Fill halves with creamy caramel filling. Put two halves together and clean the sides if necessary. Refrigerate.

***To decorate I used regular icing

1 cup powdered sugar,

1/2 tsp. vanilla

1-2 Tbsp. milk

Mix powdered sugar, vanilla and milk, 1 tablespoon at a time, until spreadable.

Add food coloring according to your decoration.
