Three of my favorite vegetables, mini peppers, zucchini and mushrooms, combined together with garlic and fresh dill make this a must try side dish the next time you’re looking to try something new and easy.
Ingredients:
1 lb sweet mini peppers (whole)
2 medium zucchini- cut in 1/2 inch circles
6 oz mushroom (white or brown mushrooms or cremini or portobello) – whole
Salt and Black Pepper to taste
3-4 Tablespoons Olive oil (or oil of your choice)
2 Tablespoons chopped fresh dill- chopped
3-4 Cloves fresh garlic- crushed
Directions:
Preheat oven to 400 degrees.
Place washed and dried vegetables in a large bowl and toss with olive oil, salt and pepper.
Arrange them in a single layer on a foil-lined rimmed baking sheet. Bake until tender, 20-25 minutes at 400°F until caramelized and fragrant.
After they are done roasting, place them in a bowl and toss with crushed garlic and chopped dill.
Serve hot and cold.

Notes
You can virtually roast any type of vegetable you want with this base recipe. Adjust amount of olive oil and salt/pepper based on the amount of veggies you're roasting.
